Dough Recipe

24 oz warm water (95 degrees)
1 1/2 tsp yeast (active dry yeast - I use saf-instant amazon for $7.64 for a pound)
2 tsp salt
7 oz whole wheat flour

6 oz Rye flour
(If you don't want to use whole wheat and rye flour you can just use bread flour just add back the portion of whole wheat and rye flour to the bread flour.)

16 oz Bread Flour or 00 flour
3 oz Bread Flour for kneading.

makes 8, 7 oz dough balls.

In a large mixing bowl add yeast to the water and stir let it sit there for a few minutes while the yeast activates. Add flour to the water and the salt.  Mix until the flour and water start to become sticky.  With the remaining flour sprinkle about an ounce onto a work surface and turn the dough out onto the floured surface and begin to knead the dough until it becomes smooth to the touch.  Keep adding flour to the surface so the dough will not stick to the surface when you knead. Knead for about 5 minutes. Cover and place in the refrigerator or in a cool place over night. About an hour before using portion dough out to 8, 7 oz dough balls.

Napoli Neapolitan Tomato Sauce

 14 1/2 ounces canned diced San Marzano Tomatos with juice

 6 ounce can tomato paste

 1 ½ teaspoon kosher salt

 ½ teaspoon minced garlic

 1 ½ teaspoon sugar

 1 ½ teaspoon dried oregano

 2 tablespoons chopped fresh basil leaves

 1 ½ tablespoon extra-virgin olive oil

 Directions: Mix all ingredients together in a bowl and use immediately or refrigerate

Pesto Ricotta Pizza

-Homemade pesto: 1 bunch of basil, 1/2 cup of (almonds, pecans or walnuts), 

2 cloves of garlic, 1/2 cup olive oil, 1/2 cup parmesan cheese (freshly grated),
